What is the difference between cane and beet sugars?
Cane sugars are manufactured from sugar cane which is grown in tropical climates. Beet sugars are manufactured from sugar beet which is a root vegetable which can be grown in more temperate climates such as the UK.
There is no difference chemically between cane and beet sugar. They are both sucrose.
What is the difference between Refined and Unrefined Brown Sugars?
Unrefined sugars lock rather than refining out the natural molasses. This adds a depth of colour and flavour that refined sugars which are simply coated in molasses do not possess.
What is Molasses and where does it come from?
Molasses is a thick black syrup which is co-product from the processing of sugar cane into sugar.
Varying amounts of molasses trapped within the crystals of the Billington’s sugar products are responsible for creating the different coloured and flavoured brown sugars. For example Dark Muscovado sugar contains a higher level of molasses than Golden Granulated sugar.
