			<description><![CDATA[<p>Hi all first post.</p><p>I just made a batch of 12 chocolate cupcakes and they are fab (if I may say so myself lol)</p><p>I used ~</p><p>75g self raising flour<br />75g sugar<br />75g of stork margarine/butter<br />1 medium egg<br />3 heaped tsp of cadburys chocolate powder.</p><p>I have made them into butterfly cakes with the help of a little buttercream and they do look great. </p><p>To make 24 just double the quantities. 			<description><![CDATA[<p>Hi Linz the best chocolate cupcake recipe i&#039;ve found is one from the hummingbird bakery cookbook&nbsp; :<br />2 eggs<br />200g caster sugar<br />130g plain flour<br />50g cocoa powder<br />2 teaspoons baking powder<br />a pinch of salt<br />160ml whole milk<br />1/4 teaspoon vanilla extract<br />160g unsalted butter, melted<br />120g dark chocolate roughly chopped</p><p>this makes 12 cupcakes<br />Pre heat oven 170 C,(325f), gas 3<br />putthe eggs and sugar in a freestanding electirc mixer with a paddle attachment (or use a handheld electirc whisk) and beat unti; pale and well combined.<br />In a separate bowl, sift together the flour, cocoa powder, baking powder and salt. In another bowl combine the milk nd vanilla extract. Gradually beat these 2 mixtures alternatley into the egg mixture little by little (scrape any unmixed ingredients from the side of the bowl with a rubber spatula). Beat until all ingredients are well incorporated. Stir in melted butter witha wooden spoon until well incorporated, then stir in the chocolate until evenly dispersed.Spoom the mixture into the paper cases until two-thirds full and bake in the pre-heated oven for about 30mins, or until the sponge bounces back when touched. A skewer insterted in the centre should come out clean. Leave cupcakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.</p><br /><p>they are delicious:)</p><p>As for your cakes sinkin in the middle its usually one of the following...... too much baking powder.&nbsp; Oven door opened too soon, or under baking..</p><p>Good luck xx</p>]]></description>

			<description><![CDATA[<p>The best receipe I have used is to make sure all the ingredients are equal. i.e. <br />6oz flour<br />6oz caster sugar <br />weigh your eggs (these should be approx 6oz too)<br />Try using half vegetable oil and butter.&nbsp; Butter gives you a heavier cake mix whereas oil makes them lighter.<br />A good tip is to fill your baking cases about 3/4 full.&nbsp; If your cakes are sinking in the middle, maybe your mixture is a bit heavy.</p>]]></description>

			<description><![CDATA[<p>Hi, i have tried several different recipes and evey single one has been a disaster, I either overfilled the cases and they go everywhere or they sink in the middle even though I haven&#039;t opened the oven door before they are cooked.<br />I just can&#039;t seem to find a chocolate cupcake recipe that I don&#039;t have problems with.<br />Any ideas what I&#039;m doing wrong?</p>]]></description>
