Topic: Sticky dough

I am new to bread making and made a farmhouse loaf by hand last week which turned out lovely. I made another one today using exactly the same recipe but when I started kneading the dough, it was very sticky and messy. I floured my hands which helped. Once risen, I went to knead it again just to knock the air out and the dough was exactly the same, as sticky as before. I didn't do anything different to last time so please can someone tell me where I have gone wrong?

It's sticky because you added too much liquid - or or not enough flour. Just add some more flour, a little at a time, while you are kneading. You'll soon get it right.

Another option would be to leave it as it is, but to use a mixer with dough hooks rather than kneading it by hand. Run the mixer on its highest power setting for four to five minutes, then place the dough in a tin for proving and baking. You'll probably find you get a lighter loaf that way, with a more open texture.

Thanks for your advice. Much appreciated. I have done as you said and my latest loaf has turned out fine. I think I panicked a bit the first time - duh!
