Topic: Pure white buttercream

Does anyone have any suggestions of how to make buttercream pure white, I used some wilton white food colouring this morning and it did lighten it but it didnt make it pure white.. I'm trying to make cherry bakewell cupcakes so the icing really needs to be pure white.
Ive heard using trex instead of butter can make it white but does this make the buttercream taste horrible?
In need of desperate help! I would be grateful for any advice smile

Butter cream will always have a slight cream coloured tint to it. A paler style of frosting can be made using cream cheese, however this may overpower your cherry bakewell flavour.

It is possible to use vegetable shortening instead of (or alongside butter) but this will give a different flavour to the butter cream.

What about using royal icing? Just put lots of glycerin in it to keep it soft.

For white Icing I normally use Royal icing, It sets hard quite well.
I think it would be pretty good for your cupcakes.
Or, you could cut circles of fondant and put them over the top of each cake for a perfect look.

some french unsalted butters are very pale, but it is going to be very difficult to get a pure white buttercream when your mixture of ingredients isnt pure white to start with.

I have also asked this question and the answer I got was to use shortening instead although I dont know what that does to the taste.  It kinda made sense as buttercream is made out of butter and butter isnt white. I have seen white icing though so I guess it must be possible - trial and error!?

its going to be almost impossible to get it white if you call it buttercream, in bakeries we use white fudge icing or frosting that can be bought in any good supermarket, if you wish you could add a little butter to change the texture slightly.

I found the answer out to this problem from my grandma only 2 days ago while I was baking! If you use a few drops of blue food colouring it turns it from the yellowy colour to a nice white. As long as you don't add too much it should work. She says she uses it at Christmas for snow on cakes smile
