Topic: Scones????

No matter which recipe I try, I cannot get my scones to rise?!

My late father used to make the BEST Scones in the World, it's one of those things where I wish so much that I'd watched him more closely!!

Can anyone tell me a foolproof recipe for Gorgeous High Scones PLEASE????

Like the ones that are on the changing homepage on here today, there's no recipe for that picture!!

Don't over mix your scones, add all the milk in one go, it should be a very soft sticky mixture, turn it out on a lightly floured board and pat it until smooth. Don't knead it or it will become tough, and don't be tempted to add more flour or you will make them dry. Roll out thickly about 3-4 cm deep, you will only get 8 scones out of a batch. If you want to glaze them with milk or egg make sure the glaze is only on te top, if it drips down the sides it will make them rise unevenly.

Thanks for that Angelica xx  I do add my milk bit by bit so I'll be changing that!  And I also think I knead the dough too much too!!  I'll let you know how I get on! x

I always find that apart from minimal handling of the dough, I like to add 1/2 teaspoon of baking powder with the flour.

In the town next to where I live there was a real greasy spoon type of cafe.  The owner made the most superb scones, I have his recipe somewhere if you're still looking.

hi i cant get my scones to rise either i have tried several times with plain flour although the recipe had no raising agent in it ,only yesterday i tried with self raising flour still no joy,they are edible but are more like rock cakes than scones.help also i have made shortbread several times but yesterday was a disaster when i opened oven they had flatened and were bubbling on tray?,could i have used too much butter.

You must make sure your oven is the correct temperature as angelica advised you roll out to 3-4-cm thick dont be tempted make them larger or try to get more out of them  they will stay flat good luck dont worry as long as they tast nice

i have been baking scones for forty years quite successfuly ,after changing my oven eighteen months ago to a stoves model ,I have not had one batch out successfuly.I have always had an electric oven .My last oven was a fan ,just like this but my scones always look over cooked even at 180degrees they sometimes rise sometimes not and are always too hard on the outside .Although they taste reasonably well .I always take a pride on the lookof my baking and these are NOT good.Do I take the plunge and buy a new oven.It is not just my baking that is substandard it is most other types of cooking.

Scones:- Try adding a tablespoon of cornflour & taking away same amount of flour as stated in recipe. Add liquid together, keeping back small amount, try mixing with a knife, keep 'testing' to ensure a soft dough, this way there's no temptation to over mix/knead the scones.
When cutting out, use one movement, don't be tempted to 'twist cutter', handle gently as little as possible, flour cutter to prevent sticking thus avoiding adding extra flour to avoid toughening scones, egg wash only on the top, for an even rise, cook in medium- hot oven just above middle shelf.  Hope this helps!

Fans ovens run hotter than standard. I would always reduce the tempearature at least 10 degrees. An oven thermometer is great too.

Hi I got a recipe for scones from my mum which has worked every time for me.
It's;
8oz self raising flour then rub in 4oz margarine add a small teaspoon of baking powder and 2ozs sugar the gradually add skimmed milk till it makes a soft dough. Then bake for 10 minutes at about 180 degrees.

My mum often lets the milk go a little sour she says it makes them nice and soft.

The one thing that hasn't been mentioned is whether or not you heat your baking trays before putting the scones on?  Just a thought.  I always think the best scones are made in a hurry that way you don't mess with them.

It is a good idea to heat the baking tray before adding the scones to bake. This will give the scones a kick-start. Also try not to leave the dough sitting around before you put it in the oven.

Have you tried warming your milk when making the dough, this will help create lovely light scones?

hi i have a tried and tested scone recipe
2lb s.r flour
1\2lb sugar
1\2lb sultanas
3tsp baking powder
1tsp bicarbonate of soda
8oz soft margarine
1 pint of milk bake in oven for 15 mins

rub flour & marg toether then add sugar, sultanas, baking powder, bicarb add milk and mix well. on a floured surface divide the mixture in half roll out to 1 inch thickness then do other half
this makes plenty!!
