Topic: Using more than 1 bread flour in recipe

As a complete bread making beginer can you advise please. When a recipe calls for more than one kind of flour for a bread machine, do you: 1) thoroughly mix all the various flour before putting into the bread pan or 2) put each kind of flour seperately in the bread pan? Thanks

Hi, it depends apparently on the breadmaker.   I use Panasonic, and would not buy any others. First the yeast goes in, then followed by the flour, then butter, milk powder, salt and suger in any order, and all on top of each other.

My Sister in Law has a Prima I believe, and with that you have to put the ingredients in separate corners

Recommended by Panasonic some years ago, I use Canadian Extra Strong White Flour from Waitrose and Allinson's yeast in the small packets.   Recommended not to buy larger size as yeast degases and should only be used apparently for 48 hours.

Thanks Shirley. What I need to know is not the order in which to add flour and ingredients. Perhaps i wasn't clear enough. For example if a recipe requires White, Wholemeal and Rye flour, do I mix all three up together prior to putting in bread pan, or is it better to put white,then wholemeal then Rye seperately in the bread pan?

I can't say for sure, but I doubt very much it makes any difference. After all, the machine is going to churn all the ingredients together, so they'll end up all mixed up anyway.

But don't take my word for it. Try it and see. The worst that can happen is that you'll get one slightly sub-perfect loaf.

Today I baked using 50% white and 50% Rye, just putting the white in first followed by the Rye. Quite a good tasting loaf. Looked good apart from the top of the bread sinking in a bit. Maybe I needed a little more water. Anyway next time I will mix the 2 flours together before putting in the bread pan to see if it looks any better or taste differently!
