Topic: dairy and soya free!

My Daughter is on a  dairy and soya free diet and I am therefore having to make everything for her.  I am having little success with white bread and rolls.  Help!  We have to use baking fat and oat (not Goat) milk wherever there is a dairy need.  Any ideas or recipes please.

Hi I have a good bread recipe for bread with no milk or any dairy products and it makes great bread I use it all the time because I have Allergies to lots of things it is a Caiabatta recipe but also makes a great loaf
       
         1tsp Yeast
    1lb 2oz  Strong white flour
      1tsp sugar
           3tbsp olive oil
               1tsp salt
                     300 ml warm water
then if you use a bread machine follow your basic bread instructions, mine is no3 I put it on

try rice milk its not as harsh as oat and has a mild vanilla taste so its not bad as a drink in its own right as well as a good substitute for baking purposes, available in cartons from most supermarkets and some chemists. makes great sauces/custard too

Nigellas Kitchen - Page 136: Coconut and Cherry Bannana Bread.  Use a dairy & soya free spread.  Works even better with gluten free flour (with some added Xanthan gum).  I use a bread machine and just replace the milk with water, all the recipes work fine.  Rice milk also work fine in Yorkshire puddings.

Our Home Economist at work advised me to use any fat that is around 70% in order to ape the results of butter.  If I'm allowed to mention brands then Pure Sunflower, Cookeen and Stork (hard version) all are around 67% and give excellent results.

Hey, my mum is allergic to dairy and soya so I never bake with either of these ingredients. Dairy and soya free margerine works well most of the time instead of butter, and if the recipe calls for melted butter, just use sunflower oil. There are recipes for fat free sponges which are great, they do need jam in the middle though cause they can be a little dry. If making a dairy free chocolate cake, use a really good quality cocoa as it does make a massive difference. I like to mix mine with some hot water and add it at the liquid stage as this makes for a really moist cake.

The majority of the recipes in Harry Eastwood's 'Red velvet and chocolate heartache' book are dairy free, instead they use ground almonds and vegetables e.g. carrot, courgette, beetroot etc to replace the butter.
