i dont know if this will help as i dont have the book any more but i seem to recall that the original Mrs Beetons cookbook, which you should be able to get from you're local library, had a very good recipe for an eggless sponge, i think this used extra milk but you should be able to use rice milk as a substitute. i'll try and investigate further for you.
I am allergic to eggs but have been making this muffin recipe for years. its actually for marmalade muffins but I have adapted it occasionally for kids using choc. chips. best eaten same day as go a little stodgy.
225g/8oz sr flour, 75g caster sugar, 3 tbsp orange marmalade, 150ml rice milk works fine, 50g soya marg., already melted. Oven at 6/200. sift flour and stir in sugar. Stir in only 2 tbsp. marmalade into the milk and then add to dry mix, spoon into cases (6 large, 10 reg. apx) bake 20 mins. till risen and golden. warm remaining marmalade and spoon/brush over muffins. if not using marmalade, you will need to add more moisture. egg sustitute is very effective.
