Topic: using fresh yeast

Can anyone tell me the method I would use to make bread in my breadmaker using fresh yeast? The instruction book says fresh yeast can be used instead of easy bake but doesn't say how/when to add it with the other ingredients. Any one tried it?

Hi I have tried it I put a teaspoon of fresh yeast in my bread machine first then I put the flour in next I always put the salt in before the water I read somewhere not to put the salt in on top of the yeast but can't for the life of me remember why. Also I get my fresh yeast from Tesco where the make the bread they will sell you some fresh yeast hope this helps

You are far better using the Active dried yeast sachets for a breadmaker as they are specially desiged for that purpose.
There is nothing wrong or inferior with dried yeast. It's just fresh yeast with most of the water removed with a little yeast nutrient added.

You should dissolve the fresh yeast in some of the liquid specified by your recipe with a little sugar so that it is easily dispersed throughout the dough.
Salt is a poison to yeast (as it is to any plant-life) so they do not like to be in direct contact. When the salt is mixed throughout the dough, it acts to inhibit the action of the yeast.

Because salt kills yeast. They shouldn't come into contact until as late as possible in the process.

I do not use a brea machine.  Can anyone tell me how much fresh yeast equals a 7g  packet of easy bake yeast or  a packet of Dried Active Yeast? Thank you

It's usually reckoned that you should double the weight of yeast if using fresh yeast as opposed to dried yeast. So 14g of fresh yeast should be the equivalent of 7g of dried yeast.
