Topic: keeping cake moist and fresh

hi,
what is the best way to keep a decorated cake with icing/fondant fresh and moist?if you cn give me tips please,thanks smile

Once a sponge cake is covered with fondant the air is excluded and it keeps fresh for up to two weeks (although I usually only keep mine for 5 - 6 days) as long as it isn't cut.  To keep it in prime condition place it in a cardboard cake box and keep it at room temperature.
It is possible to freeze cakes once they have been iced - but not decorated.  Place in cake box and wrap with cling film.  Freeze.  To defrost, remove cling film but keep cake in the box overnight.
