Hello fellow bakers. I hope you are well and have been baking lots of goodies recently.

At Baking Mad we always want to make sure we know lots about the people who use our site so I wondered if you would mind answering a few questions so we can get to know you a little better. You can answer in as much detail as you like!

1. What are the next 3 recipes you want to try and why?
2. What are the biggest factors that make you want to try something new?
3. Who do you admire at the moment in the world of baking? Why?
4. What do you enjoy most about baking?
5. What sugars do you regularly use when you cook? Do you find them easy to use?

Here are my answers to your questions:

1.  I only decide what I'm going to cook once I've got out the bowl, scales and mixer.

2.  When I have ingredients I want to use up, but need inspiration for something new, or a new slant on an old recipe.

3.  Nigella Lawson.  I like her recipes and her sense of humour.

4.  Eating the results.

5.  In my cupboard I always have: dark brown sugar, light brown sugar, demerara sugar, caster sugar, icing sugar and granulated sugar.  I haven't found any of them difficult to use.  Naterbox

Here are my answers:

1)Choux pastry (I've never tried it before) Foccacia, it looks really rustic and delicious and proper sausage rolls that don't explode in the oven
2) When my family get bored of a certain selection of food, I look through old recipe books and go through websites.
3)Nigel Slater, he has the confidence to alter recipes to make them even better.
4)I'd have to agree with Naterbox here, eating the results and licking the bowl!
5)I use castor sugar mainly and get in any other sugars when I want to make something out of the norm.

1.  Bread Rolls - I've never made them before and always wanted to so I've got the ingredients ready for next week!!   Mince Pies - Just because everyone loves them!!   Iced Buns - After watching the Breat British Bake Off, can't wait for this week's masterclass so I can watch Mary and Paul make them!!

2.  Just if I like the sound of it.

3.  I also LOVE Nigella, she's just the QUEEN!!!!!  I also follow a lot of Mrs Beeton's recipes if I'm doing something savoury.

4.  Watching people's faces as they enjoy what I've baked/cooked, it makes all the time and effort worthwhile!  I also LOVE spending Sunday mornings baking with my little boy as he really enjoys getting stuck in and he's only 5.

5.  I usually use Caster Sugar and Icing Sugar, basically because most recipes ask for them.  But I've just bought some Silver Spoon Light to make some cakes for a taster night at my local Slimming World.

1. Foccacia - have made it before but one of my teenagers wants to have a go with me.  I made Paul Hollywood's Iced Buns last weekend - absolutely lovely but a bit long winded, leaving dough to rise, shaping, cooking, leaving to cool, leaving icing to set etc.  I also made Chocolate Fondant puddings last week - turned out perfectly.

2. Having the ingredients in the cupboard and recipe not being to long or complicated (unless i've got the time to spare).

3.  I like Hugh Fearnley Whittingstall - he doesn't make anything to precise or fancy and his enthusiasm is catching.

4. I love baking for family and friends just to see their faces smile  Eating my creations is good to.  It seems a lot of my children's friends parents don't bake at all and its a real treat to have something homemade.

5. I have granulated, caster, icing, dark brown soft, light brown soft and muscovado sugar in my cupboard.  Only problem is occassional hard lumps of the brown sugars that need breaking up to be able to get a smooth mix.

1. like naterbox i tend to be led by whats in the cupboard/needs using up once ive got the bowl, scales and a glass of wine on the go.
2. usually if its something new my kids/family might like, or something that can be put in packed lunch boxes. 
3. i think the tv chefs have hit a bit of a plateau at the moment, and i cant say i admire any of them.  i love that there is a massive variety of styles available to watch through tv and internet - i like oriental food so i find those programs particularly interesting.
4. eating the results!
5. soft light brown (for the weekly hot cross bun loaves), white sugar (if i need caster i just whizz it down with the handblender), demerara and anything else that might have been on offer.  have no problems with using sugar.

1.I'm going to try cream filled Choux buns with coffee icing then Eccles cakes then try to find a recipe for a really moist coconut cake to use some tinned coconut milk I bought on impulse.
2.To test myself. Its a real boost to the self esteem when it turns out as it should.
3.Mary Berry for sweet things and Hugh F-W for savoury.
4.Baking feels like a craft and an art form and the results (usually) give much pleasure. Just wish the family weren't all watching their weight and keep asking me to ease up on the cakes.
5.Soft brown, castor, ordinary and icing sugar. Need to clean the kitchen after the last one though - it seems to go everywhere.

I am going to try foccaccia,coconut and almond macaroons and palmiers

2. What are the biggest factors that make you want to try something new?
I like to experiment and see how things turn out and how i can tweak them.

3. Who do you admire at the moment in the world of baking? Why?
Mary Berry, she is an inspiration to get you baking.

4. What do you enjoy most about baking?
I enjoy making things that people like to eat, it's very satisfying, i also find it theraputic if i am having a bad day.

5. What sugars do you regularly use when you cook? Do you find them easy to use?
I use, caster, golden caster, muscavado, light muscavado, icing and i make my own vanilla sugar. I find them all easy to use, icing sugar is possibly the worst as it gets in every nook and cranny:)

1.  A large Chocolate cake decorated with chocolate cigarellos for a special occasion, Baked Alaska to see if I can do it and a good old fashion meat pie for my hubby.

2. To see if I can master the skill required

3. Ruth Clemens who was in the GBBO in 2010 - she has a very relaxed organised approach to baking.

4. The accomplishment and the taste of course.

5. Caster sugar, soft brown, light muscavado and dark. Some of the darker sugars I have to seive if they are lumpy.

Something new to add to list of meals to make for tea.

Relaxing and satisfying knowing you made it and you know what is in it

Apple Danish, Cherry and Oat Loaf, Bagels - all requested by family and friends

2. What are the biggest factors that make you want to try something new?
Demand - family, friends and people I bake for ask for things I haven't done before

3. Who do you admire at the moment in the world of baking? Why?
Dan Leppard - awesome breads!

4. What do you enjoy most about baking?
The results! Fresh, wholesome and wonderfully flavoursome food with no additives and the sheer pleasure of creating it from such simple ingredients.

5. What sugars do you regularly use when you cook? Do you find them easy to use?
Billingtons: Golden Caster, Light and Dark Muscovado, Molasses, Demerara.
Other brands: Blackstrap Molasses, Malt Extract, Clear Honey, Icing sugar.
I never have any problems with them.
