I have developed an allergy to eggs, is there any recipes where i can use a substitute to eggs? and if so what and how much should i use?

Hi there,

I often bake cakes without eggs.  The egg is really used as a binder, so sometimes I use 1/2 banana instead of 1 egg.  However, banana isn't to everyone's taste, so I have also bought a product called 'No Egg' from Orgran.  It's a tasteless, natural egg replacer, made with potato starch and tapioca flour and is sold (along with other egg substitutes' in most healthfood shops).  Supermarkets are now increasing their ranges too.  'www.orgran.com' for more info.  Give it a try...it gives good results if you use it as instructed.

Hello there I am new to this.  My best friend is coming over and she is vegan I would love to make an apple pie for them but every recipe I found has eggs in it and obviously I can use those in a vegan pie. So if anybody has an apple pie recipe that has no eggs or a substitute please could you let me know?  Thanks for your help.

Hi,

You can use some spreads for pastry since your friend will not eat butter either.   Check the tubs and packs for details.   Just be carefrul with handling as the spread  as it will be softer than butter for handling.  Instead of glazing the pastry you will have to accept a paler bake as you will not be able to use milk or egg to glaze.  Why not try a little water and sprinkle some caster sugar on it to create a little texture.

Always a little challenging when you want to create a traditional bake but with alternative ingedients.

Try ground flax seed/meal.  For one egg, take a heaping spoonful and add water to make a sticky paste.  Works very well in recipes that need egg as a binder.  Try substituting buttermilk with baking soda if you need an egg for leavening.

Hi. I have a 4yaer old and a 15month old who are allergic to eggs, nuts and milk. Sooo, baking and cooking has been a real challenge. As far as eggless baking is concerned, I have tried the orgran egg replacement and it is awful. I use baking powder instead and have had great success with particularly pancakes and waffles.

I was given an eggless sponge recipe by one of my customers when I worked evening at Asda - it uses golden syrup as the substitute...
450g plain flour, 2 tsp bicarb+ 2 tp baking powder - sieved together
175g sugar, 225g marg, 2 cups milk (or 2 little cartons soya dream) + 4tbsp golden syrup - slowly melted together in a large pan.
Whisk flour mix into the pan until smooth, pour ointo 2 lined swiss roll tins
Bake @180C for 25mins in middle & botton shelves & swap over, then finish baking for another 12mins.
It worked out very well for numerous (strict) Hindu wedding cakes, but did them as close to te wedding day as possible as I think they're better fresh.

Hi all at Baking Mad.
I have a friend who is a Vegan, and we're doing a leaving party for him this weekend, before he goes on a 7 mth travelling spree.
I need a receipe with no Eggs, Butter or Milk.
Can anyone help, Please.

Hi all,

If you just want to make eggless cupcakes (for this who have an intolerance or dint eat eggs for religious reasons, I've found that you want substitute arrowroot powder for eggs and follow your regular recipe - substitute 2tablespoons of arrowroot powder for each egg in your recipe. I use the hummingbird bakery's recipes and they always turn out perfect!!

I have a great eggless recipe that works every time

Easy Peasy Vegan Cake

Line two 8” round cake tins

300g Flour – Plain or SR doesn’t make any difference !
50g of Cocoa Powder

Or

350g Flour – Plain or SR doesn’t make any difference !


Other must ingredients are

250g Sugar
3 Teaspoons baking Powder
9 Tablespoons of Sunflower Oil


350ml Fluid – this can be just soya, oat or rice milk or I have used mashed banana, pureed
mango and fruit juice etc with the soya, oat or rice milk to make up 350ml total

Mix every thing together, all at once and, share between the two tins and cook for 30mins or so in the middle of the oven on Gas 5

If I have used just milk to mix it I might have also added other stuff like nuts, dates, sultanas, spices etc or lemon essence/grated lemon or coffee and walnuts etc etc

I generally sandwich the two halves together with, if plain jam, or butter icing of some flavour to suit the cake.  When I made a Lemon one I used a very thin layer of lime marmalade (no peel) with vanilla  icing


Make, Bake and Enjoy

To make butter icing – mix Soya Pure (about 50g)  with some icing sugar and just keep mixing until it is all blended.
