Topic: Raising flour? Please help?

My son wanted to do some cake baking so off to the shop we go to buy eggs, etc. we came home and I realised the flour went out of date two months ago. Is it still ok to use the flour because it's been kept well and it smells as it should? I really don't want to go back out in the cold for some more flour! :( please help xx

Re: Raising flour? Please help?

If the flour is not actually mouldy, it's probably OK to go ahead with it. In general, a month or two won't make any difference, provided it's been kept dry.

If it's self-raising flour, you might want to use an extra bit of baking powder in the recipe, but that's probably not essential.
