Hi,
I have been making bread for only about a year and have really only made brown and white breads in diffrent shapes.so i was hoping this time to do somthing a bit different could anyone suggest something?

You could try some of the speciality flours, like malthouse, spelt or barleycorn. Don't use them on their own. Mix half-and-half with strong white flour.
Or, look up a recipe for rye or pumpernickel bread (but they're not to everyone's taste).
Or, stick with your existing recipes, but add a good dollop of seeds (sunflower, sesame, linseed, pumpkin, etc).

You could also try adding herbs and spices to basic loaf recipes to make them a bit more interesting. You can even incorporate other ingredients e.g. sundried tomatoes or pesto or even vegetables. I bought a bread book a couple of years ago quite cheaply, sadly it's out of print now or I'd recommend it, but Amazon have a wide selection of books that are not too expensive which might give you some inspiration.

Ever thought of making sourdough bread, once you have your starter up and running with a bit of luck and a back wind you should get wonderful bread.
I agree with the comments above try adding what ever you prefer.
I'm wishing to try a 'Danish Pastry' recipe using the traditional method. (Yeast).
I 'googled' 'Danish pastry' & many different varieties came up.
I decided to try the dough made from yeast, then follow the addition of extra butter, folding & turning (as with puff pastry). Was well worth the effort resulting in beautiful, crisp, butter flaky pastries that went down a treat!

I love onion and carrot bread.
Try chopping an onion to the mix or grating a carrot.
I've even tried this with both and they are great.
Another great one to try is lemon and poppy seeds.
This one needs the zest of a lemon and two tablespoons of
poppy seeds.
