Galette Breton Comme Mamie Ingredients

350 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
250 grams Unsalted Butter
250 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
6 Egg Yolk Egg Yolk
1 pinch Salt
2 tbsp Dark Rum
100 grams Prunes (sliced)
2 tsp Vanilla Paste (Silver Spoon Create) Vanilla Paste (Silver Spoon Create)

How to make Galette Breton Comme Mamie

  1. In a bowl, add the caster sugar and sifted flour to the butter and rub with your fingers. method tip
  2. Add in 5 yolks, some rum and the vanilla paste to make dough. method tip
  3. Knead the mixture on a floured surface. method tip
  4. Tear off a bit of the mixture and push down in to small greased tins, half-filling each.
  5. Layer the sliced prunes on top and then cover them with another layer of the biscuit dough.
  6. Repeat this process with the rest of the mixture to create around 5-6 biscuits.
  7. Brush each cookie surface with the yolk of your final egg and then fork with a traditional design.
  8. Place in a pre-heated oven at 180c for 20 – 25 minutes. Once cooled, serve and enjoy.
