Hazelnut and Orange Cookies Ingredients

75 grams Softened Butter
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 Happy Eggs large Happy Eggs
175 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
0.50 tsp Bicarbonate Of Soda
1 Orange Rind grated
50 grams Hazelnuts roughly chopped

How to make Hazelnut and Orange Cookies

  1. Cream together the butter and sugar, then beat in the egg. Add all the remaining ingredients and stir well. method tip
  2. Drop heaped tablespoonfuls of the mixture onto greased baking sheets leaving room to spread (about 4-6 per sheet).
  3. Bake in a preheated oven at 180°C, 350°F, gas mark 4 for 12-15 minutes or until the edges are just beginning to brown; they should still be soft in the centre. method tip
  4. Cool on the baking sheets for about 1minute, then transfer to a wire rack to cool completely.
  5. Variation; Lemon & Raisin. Replace the orange rind with the rind of a lemon, and the hazelnuts with 50g (2oz) raisins.

"Nice recipe. I didn't quite have the right ingredients so used a teaspoon of orange essence instead of the zest and did half pecans, half chili chocolate instead of the hazelnuts. worked well though, tasty and moist,"
