Rock Cakes Ingredients

225 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 pinch Salt
2 tsp Baking Powder
75 grams Butter
75 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
75 grams Currants
0.25 tsp Nutmeg grated
0.25 tsp Ground mixed spice
1 Happy Eggs beaten Happy Eggs
2.50 tbsp Milk Milk

How to make Rock Cakes

  1. Heat the oven to 190°C|375°F|Gas Mark 5. Grease a baking tray. method tip
  2. Sift the flour, salt and baking powder into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. method tip
  3. Stir in the sugar, fruit and spices. Beat in the egg and just enough milk to make a stiff mixture. method tip
  4. Drop tablespoons of the mixture on the baking tray and rough up each with a fork.
  5. Bake for 15 to 20 minutes until cooked through. Cool on a wire rack
