Cake Balls

Lovely little cakes for gifting.

Add a variety of flavourings to the butter icing to get a variety of flavours to the cake balls.  you could try adding cocoa powder, lemon juice, orange juice, almond essence or coffee flavouring.

Cake Balls Ingredients

150 grams Butter unsalted, softened
150 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
3 Happy Eggs beaten Happy Eggs
0.50 tsp vanilla essence
150 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
30 ml Milk Milk

Additional Ingredients

120 grams Butter softened
240 grams Golden Icing Sugar (Billington's) Golden Icing Sugar (Billington's)
2 tbsp JUST MILK

How to make Cake Balls

  1. Preheat the oven to 200°C/180°C fan/ 400°F/Gas 6. Grease a 15cm/6in square cake tin method tip
  2. In a large bowl, beat the butter, sugar, eggs, vanilla essence, flour and milk together until smooth method tip
  3. Spoon the mixture into the tin and bake for 25-30 minutes, or until springy to the touch. Leave to cool on a wire rack
  4. For the butter icing: Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth. Then add the remaining icing sugar with one tablespoon of the milk method tip
  5. Alternatively you could try using other flavours... Take a third of the icing and add a tablespoon of cocoa powder, almond essence or coffee flavouring. Use to bind a third of the cake crumbs. Decorate the cake balls with melted chocolate and grated chocolate. Take a third of the icing and add the zest and juice of ½ a lemon or orange. Beat until smooth. Use to bind a third of the cake crumbs. Decorate the cake balls with icing and top with lemon zest.
  6. Beat until soft and creamy. When the Madeira cake is completely cooled, break and crumble into a bowl. Add about half the icing and mix until the crumbled cake begins to bind together. Dust your hands with icing sugar and roll the cake mix into walnuts sized balls. Leave to set.
  7. Decorate the cake balls with melted chocolate, or icing and a selection of sprinkles or glitter.

"I might be a thicko here but where does it tell you to make balls? It just says spoon the mixture etc. not make into ? many balls and place on a tray etc. Any ideas?."

Bakingmad: "Hi, With this recipe you bake the cake and cool it. At step 5 you will see we suggest you crumble the cake into a bowl then add the icing mixture and roll the cake mix into walnut sized balls. The recipe makes about 25 little cake balls we have this detial in the portion are of the recipe layout. Hope this clarifys your questions. Happy Baking "
