Chocolate Gingerbread Ingredients

200 grams Molasses Sugar (Billington's) Molasses Sugar (Billington's)
4 Happy Eggs Happy Eggs
50 grams Chocolate (Silver Spoon Create) Plain 65% cocoa solids
75 grams Butter unsalted
4 tbsp Yoghurt
pinch Salt
225 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
25 grams Cocoa Powder
2 tsp Baking Powder
3 tsp Ginger ground
0.50 tsp Cinnamon ground
0.25 tsp Mixed Spice
0.25 tsp Nutmeg freshly grated

How to make Chocolate Gingerbread

  1. Whisk the eggs and sugar until combined. Melt the chocolate and butter in a bowl over a pan of simmering (not boiling) water or in a microwave oven. Stir in the yoghurt. Gently stir into the egg mixture. method tip
  2. Sift the dry ingredients together and gently fold into the chocolate mixture until well combined. Pour the mixture into a 23cm/9 inch greased square tin and bake for about 45 minutes Gas mark 4/180ºC/350ºF until cooked through. method tip
  3. Leave in the tin for 15 minutes, and then turn out onto a wire rack to become cold. Store in an airtight tin.
