Eton Mess Cake Ingredients

125 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
125 grams Butter unsalted
1 tsp Vanilla Extract (Nielsen-Massey) Vanilla Extract (Nielsen-Massey)
200 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
100 grams Almonds ground
0.50 tsp Baking Powder
4 Free Range Eggs Large Free Range Eggs
300 grams Strawberries cut in half
2-3 broken meringue nests

How to make Eton Mess Cake

  1. Cream the butter and sugar together method tip
  2. Beat in the eggs and vanilla extract, until mix is light and creamy.
  3. Fold in the sifted flour and ground almonds. method tip
  4. Line a baking tray (33cm x 18cm approx) with greaseproof paper.
  5. Spoon the mixture into the prepared tin.
  6. Lay the strawberries cut side down into the mixture along with the broken meringue nests.
  7. Bake until golden brown or until a skewer inserted comes out clean. method tip
  8. Allow to cool and then cut into 12 portions and serve on its own or with cream.
