Fruity Sponge Squares Ingredients

75 grams Sultanas
30 ml Brandy
25 grams Granulated Sugar (Silver Spoon Homegrown) Granulated Sugar (Silver Spoon Homegrown)
2.50 ml Cinnamon ground
150 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
1 tsp Baking Powder
1 tsp Ground mixed spice
125 grams Margarine
125 grams Dark Muscovado Sugar (Billington's) Dark Muscovado Sugar (Billington's)
2 Free Range Eggs large Free Range Eggs
50 grams Walnut Pieces
125 grams Luxury Mincemeat

How to make Fruity Sponge Squares

  1. Place the sultanas and brandy in a bowl, stir well and leave to marinate. method tip
  2. Mix together the granulated sugar and ground cinnamon and set aside. Grease and base line a 25.5x 16cm (10x61/2in) oblong baking tin. method tip
  3. Sieve the flour, baking powder and mixed spice into a large bowl. Add the margarine, dark brown sugar and eggs and beat well with a wooden spoon or electric hand whisk until smooth. method tip
  4. Fold the nuts, mincemeat and marinated fruit into the mixture and spoon into the tin. Level the surface and sprinkle over the cinnamon sugar.
  5. Bake in a preheated oven at 190°C, 375°F, gas mark 5 for about 20 minutes or until golden and a skewer inserted in the centre comes out clean. Allow to stand in the tin for 10 minutes before turning out onto a wire rack to cool. method tip
  6. Transfer the cake to a board and cut into squares.
