Rich Chocolate Cake Ingredients

200 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
300 grams Dark Chocolate (Silver Spoon Create) At least 60% cocoa solids Dark Chocolate (Silver Spoon Create)
250 grams Butter
2 tbsp Coffee Crystals Strong Black
6 Free Range Eggs Large sized, seperated Free Range Eggs
100 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
Cocoa Powder For dusting
225 grams Raspberries

How to make Rich Chocolate Cake

  1. Preheat the oven to 200°C/180°C/gas mark 6. Grease a 23 cm spring form tin. Melt together the chocolate, butter and coffee in a bowl over a pan of simmering (not boiling) water, or in the microwave. method tip
  2. Cool.
  3. Whisk the sugar with the egg yolks until pale and thick. method tip
  4. Fold in the chocolate mixture with the flour.
  5. Whisk the egg whites until stiff but not dry and fold into the mixture. method tip
  6. Pour into the prepared cake tin and bake for 20-25 minutes until the edges are set, but the centre is still soft.
  7. Leave to cool, then wrap in cling film and leave at room temperature for a day before cutting.
  8. Dust the top with cocoa powder and place on a serving plate surrounded by raspberries.
