Toffee and Apple Sauce Muffins Ingredients

300 grams Apple(s) Approx 2 large Bramley apples
100 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
1 tsp Cinnamon ground
2 tsp Calvados
1 tsp Water

275 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
100 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 tbsp Baking Powder
75 grams Unsalted Butter softened
2 Free Range Eggs large Free Range Eggs
125 ml Milk full fat Milk
100 grams Fudge Pieces Fudge Pieces
2 tsp Light Muscovado Sugar (Billington's) mixed with ground cinnamon Light Muscovado Sugar (Billington's)
1 tsp Cinnamon ground. mixed with muscovado sugar

How to make Toffee and Apple Sauce Muffins

  1. Preheat the oven to 200°C/ 180°C fan/ Mark 6. Line a 12 cup muffin tin with muffin papers method tip
  2. Sift the flour, sugar and baking powder into a large mixing bowl method tip
  3. In a SEPERATE bowl beat the butter and eggs together then add the milk. Stir the flour mixture into the egg mixture until just incorporated and smooth. Put on a high speed and beat for 2-3 minutes until light. Finally add the fudge pieces and mix method tip
  4. Spoon half the mixture into the muffin cases then spoon over the apple sauce. (Ensure that the sauce is the same consistency as the Batter so that it doesn't sink into the cakes)
  5. Cover with the remaining muffin batter and sprinkle with lots of cinnamon sugar
  6. Bake in the preheated oven for 20-25 minutes. Cool on a wire rack. Dust with icing sugar method tip
  7. They are fantastic warm with the steamy applesauce centre and melting fudge
