Ice Cream Cone Cupcakes Ingredients

115 grams Butter unsalted, room temperature
115 grams Caster Sugar (Silver Spoon Homegrown) Caster Sugar (Silver Spoon Homegrown)
3 Free Range Eggs Free Range Eggs
115 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
1 tsp Baking Powder
0.50 tsp Vanilla Extract
12 Cup Cones (Askeys) flat based Cup Cones (Askeys)
12 Flakes, Small

For the Icing:

250 grams Butter unsalted, room temperature
500 grams Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)
1.50 tsp Vanilla Extract

How to make Ice Cream Cone Cupcakes

  1. Preheat the oven to 180°C/350°F/gas 4. method tip
  2. Cut 12 squares of foil and press them into muffin/cupcake tin. Put each cone in each section ensuring they are firmly in place.
  3. Cream the butter and sugar together until pale and fluffy. Gradually at the beaten eggs and mix until well incorporated. method tip
  4. Sift the flour and baking powder into the mix a third at a time, stirring to incoporate. Add the vanilla extract. method tip
  5. Spoon the cake mix into the cones.
  6. Bake for about 20 mins until golden and a skewer comes out clean. Leave to cool on a wire rack. method tip
  7. To make the butter icing, beat the butter until pale and fluffy and add the icing sugar and vanilla. Pipe the butter icing onto each cake and add a flake.
