250 grams Butter (unsalted)

How to make Pudsey Rainbow Cupcakes

  1. Preheat the oven to 180°C. Line a cupcake tray with 12 cases. method tip
  2. Beat the butter and sugar together until light and fluffy. Add the eggs one by one, beating well after each addition. method tip
  3. Add the milk and vanilla extract. Finally, stir in the flour and mix well. method tip
  4. Divide the mixture into equal portions - add food colouring to each portion and mix well. Try using a plastic bag which saves washing up and helps with piping the batter into the cases. method tip
  5. Pipe a layer of 1 colour into all the cases, followed by the second colour. Repeat until all the batter has been used. You can use a toothpick to swirl the batter for a marbled effect. Do not fill the cupcake cases more than ¾ full.
  6. Bake for 20-25 minutes until brown. A skewer inserted into the middle should come out clean. Place on a cooling rack to cool completely. method tip
  7. To make the frosting, whisk the butter, sugar, milk and vanilla extract or vanilla bean paste together until light and fluffy. Add yellow food colouring.
  8. Use a small palette knife to spread frosting evenly on top of each cupcake. method tip
  9. Decorate with coloured choco beans on the left to form his patch and black writing icing to draw eyes, nose and mouth.
