Low Calorie Gazpacho Ingredients

1 kg Tomatoes fresh
2 Cloves of Garlic
1 Red Pepper diced
½ cucumber, deseeded and diced
2 slices day old white bread, roughly cubed
2 tbsp chopped mint
125 grams red wine vinegar
3 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
125 ml Olive Oil

How to make Low Calorie Gazpacho

  1. Cut a small cross in the bottom of the tomatoes and place in a bowl of boiling water. Leave for 7-9 minutes. Drain and then plunge into cold water. Peel the skins off the tomatoes. Cut into cubes and place in a mixing bowl with the garlic, peppers and cucumber.
  2. Add the bread, mint, vinegar, sugar and olive oil. Cover and chill for about 1 hour or preferably over night. Taste and adjust the taste with sugar.
  3. Serve with pitta bread.
