Scones are a classic British cake, and these Low Calorie Scones are no exception.  Why not trying serving with this some instant crushed strawberry filling and you will only need a small dollop of low fat cream or crème fraiche.

225 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
0.50 tsp Baking Powder
50 grams low fat spread
1 Happy Eggs Happy Eggs
125 ml Milk semi skimmed Milk
25 grams Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
1 pinch Salt
25 grams Sultanas

Additional Ingredients

For the crushed strawberries:

150 grams fresh strawberries, hulled and roughly chopped
3 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)

How to make Low Calorie Half Spoon Scones

  1. Preheat oven to 220°C, fan oven 200°C, 400°F, and gas mark 6 method tip
  2. Sieve the flour into a mixing bowl, add low fat spread, and rub in to make breadcrumb texture. Stir in sugar and salt. method tip
  3. Beat the egg in a measuring jug, and add just enough milk to make up 150ml liquid. method tip
  4. Add the egg mix to the dry ingredients a little at a time and mix with a knife. (you may not need all the egg mix, but keep to use a s a glaze) When the mixture begins to come together, use your hands to collect the dough together – it should be soft but not sticky. method tip
  5. Turn the dough out onto a well floured board, and pat out to depth of about 2cm. Cut out rounds and put on baking tray, glaze with remaining egg mix and put into top of oven for between 12-15 minutes until risen and golden.
  6. For the crushed strawberries: Place the strawberries into a large bowl and add the sugar. Lightly mash, using the back of a fork or a potato masher. Do not over mash.
  7. Split the scone, and spoon the crushed strawberries over one half and add a small dollop of the low fat cream. Replace the top and enjoy.
  8. Tip: Replace the sultanas with dried cranberries or cherries or leave the frits out completely if preferred.
