Ginger Cordial Ingredients

1 Lemon unwaxed
150 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
Ginger 1.5cm fresh, peeled and chopped
2 tsp Cream of Tartar
50 ml Lemon freshly squeezed juice

How to make Ginger Cordial

  1. Slice the peel off the lemon leaving as much of the pith behind as possible. Trim off any additional white pith from peel and discard
  2. Pour the sugar, 240ml water, ginger, cream of tartar and the lemon peel in a heavy based pan and bring to a boil over high heat, stirring occasionally, until sugar has dissolved
  3. Add lemon juice and return to a boil. Strain mixture through muslin or a fine mesh sieve. Leave to cool and pour into a clean bottle. Keep refrigerated for up to 2 weeks.
