Gooseberry Fool Ingredients

450 grams Gooseberries
4 tsp Golden Caster Sugar (Billington's) 4-5 heaped tspn Golden Caster Sugar (Billington's)
1 dstspn Elderflower Cordial
300 ml Double Cream

How to make Gooseberry Fool

  1. Wash, then top & tail the gooseberries. Put them in a large saucepan with the sugar, Elderflower Cordial and a splash of water.
  2. Bring the fruit to the boil and simmer for 10 minutes.
  3. Cool then chill in the fridge. When cold crush the fruit with a fork.
  4. Whip the double cream until soft folds form, then fold in the fruit.
  5. Serve
