Mojito Sorbet Ingredients

200 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
400 ml Water
50 ml freshly squeezed Lime Juice (approx 2 limes)
25 ml Rum (I used Bacardi)
Zest of 2 Limes
1 tbsp Dark Muscovado Sugar (Billington's) Dark Muscovado Sugar (Billington's)

How to make Mojito Sorbet

  1. Put the caster sugar and water into a saucepan over a medium heat, stirring until the sugar dissolves.
  2. Add the mint sprigs, stir until the syrup starts to boil, reduce the heat and simmer for 5 minutes.
  3. Remove from the heat, cover and leave to stand for about 15 minutes.
  4. Strain the syrup mixture into a large bowl (removing the mint sprigs).
  5. Add the lime juice, rum and lime zest and stir. Then add the brown sugar and stir until dissolved. Pour into a shallow plastic container.
  6. Chill in the fridge for about 4 hours or overnight.
  7. Churn in an ice cream maker according to manufacturer’s instructions OR put in the freezer and stir every hour until frozen, this should take about 4 hours.
  8. Serving suggestion: Serve with a slice of lime and a sprig of mint
