Mojito Sorbet

Why not try making this alcoholic Mojito Sorbet. Perfect for an adult after dinner dessert.

How to make Mojito Sorbet

- Put the caster sugar and water into a saucepan over a medium heat, stirring until the sugar dissolves.
- Add the mint sprigs, stir until the syrup starts to boil, reduce the heat and simmer for 5 minutes.
- Remove from the heat, cover and leave to stand for about 15 minutes.
- Strain the syrup mixture into a large bowl (removing the mint sprigs).
- Add the lime juice, rum and lime zest and stir. Then add the brown sugar and stir until dissolved. Pour into a shallow plastic container.
- Chill in the fridge for about 4 hours or overnight.
- Churn in an ice cream maker according to manufacturer’s instructions OR put in the freezer and stir every hour until frozen, this should take about 4 hours.
- Serving suggestion: Serve with a slice of lime and a sprig of mint
