Seriously Chocolatey Ice Cream Ingredients

8 Free Range Eggs Yolks Free Range Eggs
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 l Whole Milk
200 grams Dark Chocolate (Silver Spoon Create) broken into pieces Dark Chocolate (Silver Spoon Create)
250 grams Cocoa Powder

How to make Seriously Chocolatey Ice Cream

  1. Whisk the egg yolks and sugar. In a large bowl, with an electric whisk until pale and thick.
  2. Pour the milk into a large saucepan, add the chocolate pieces and cocoa and bring to a simmer, stirring constantly until well mixed. method tip
  3. Pour over the yolk/sugar mixture, beating all the time, ensuring it is well mixed.
  4. Chill in the fridge for 3-4 hours.
  5. Churn in an ice cream maker until frozen OR pour into a container and place in the freezer, mixing every hour to ensure there are no large crystals.
  6. Freeze until solid.
  7. Leave to soften in the fridge for 15-20 minutes before serving
