Hedgeosaurus Ingredients

For the cake:
100 grams plain chocolate
100 grams Butter softened
250 ml Milk Milk
1 tbsp White Wine Vinegar
15 grams Cocoa Powder sifted
300 grams Self Raising White Flour (Allinson Nature Friendly) sifted Self Raising White Flour (Allinson Nature Friendly)
1 tsp Bicarbonate Of Soda sifted
225 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 Free Range Eggs Free Range Eggs
4 tbsp Raspberry Jam

100 grams Butter
400 grams Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)
50 grams Cocoa Powder

1 White Designer Icing (Silver Spoon Create)

How to make Hedgeosaurus

  1. Preheat the oven to 180°C/fan160°C/gas 4. Grease a 23cm round, deep cake tin and line with baking paper. Place one cupcake case in a cupcake tin. method tip
  2. Place the chocolate with 50g of the butter in a bowl and melt over a pan of hot water. Remove from the heat and stir in the remaining butter. method tip
  3. Mix the milk and vinegar. Place all the other cake ingredients in a large mixing bowl. Pour in the milk mixture and chocolate butter mixture. Beat until smooth. method tip
  4. Place I heaped tbsp of the cake mixture in one cupcake case. Spread the remaining mixture into the cake tin. Bake the cupcake for 20-25 mins until just firm to the touch and bake the large cake for 50 mins to 1 hour, until firm in the centre. Cool for 10 minutes, then turn out and cool completely. method tip
  5. To make the buttercream place the butter in a bowl with 1-2 tsp boiling water, add the icing sugar and cocoa and beat until smooth. method tip
  6. Cut the large cake in half across the diameter and sandwich the flat sides together with jam to make the body of the hedgeosaurus. Place the cake on the cake board with the cupcake at one end to make the head. Spread the butter cream all over the top and sides of the cake and the cupcake.
  7. Coat the cake with chocolate curls.
  8. Place 5 whole ice cream cones down the back of the cake. Cut the pointed end off 10 cornets and use them as horns on the head and as feet.
  9. Cut the top of one cornet in half to make the eyebrows and push into the cake. Using the white decoration icing to pipe eyes and add choco beans for pupils.
