This was an original Allinson's recipe in the 1970s. I lost mine, and a member of Allinson's staff found her own copy at home, copied it and sent it to me. Impressed? You bet! And it's delicious.

Ingredients
| 125 grams | Allinson Nature Friendly Plain White Flour | ![]() |
| 100 grams | Butter | |
| 2 | Egg | |
| 100 grams | Billington's Demerara Sugar | ![]() |
| 1 tsp | Baking Powder | |
| Water or fruit juice to mix |
Additional Ingredients
| 2 | Apple large | |
| 1 tbsp | Billington's Demerara Sugar | ![]() |
| 1 tsp | Cinnamon |
Method

- Heat oven to 375/400F/180C/Gas 4. CreaBeat in eggs gradually Mix flour and Baking Powder together and folld in with the liquid to a soft mixture Pour into a greased swiss roll tin and spread evenly m fat and sugar to fluffy.
- Peel core trim, and cut the apples into quarters. Slice finely Arrange on top of raw cake mix in rows
- Sprinkle top with sugar and cinnamon Bake 25-30 minutes (Check after 25 minutes to ensure it isn't getting too browned)
- Member top tip....You can add some cinnamon to the cake mix if you like. Or you can omit the apple and cinnamon and replace with chopped dates and walnuts
