This was an original Allinson's recipe in the 1970s. I lost mine, and a member of Allinson's staff found her own copy at home, copied it and sent it to me.

Impressed? You bet!

And it's delicious.

Ingredients

125 grams Allinson Nature Friendly Plain White Flour
100 grams Butter
2 Egg
100 grams Billington's Demerara Sugar
1 tsp Baking Powder
Water or fruit juice to mix

2 Apple large
1 tbsp Billington's Demerara Sugar
1 tsp Cinnamon

Method

  1. Heat oven to 375/400F/180C/Gas 4. CreaBeat in eggs gradually Mix flour and Baking Powder together and folld in with the liquid to a soft mixture Pour into a greased swiss roll tin and spread evenly m fat and sugar to fluffy.
  2. Peel core trim, and cut the apples into quarters. Slice finely Arrange on top of raw cake mix in rows
  3. Sprinkle top with sugar and cinnamon Bake 25-30 minutes (Check after 25 minutes to ensure it isn't getting too browned)
  4. Member top tip....You can add some cinnamon to the cake mix if you like. Or you can omit the apple and cinnamon and replace with chopped dates and walnuts
