Blueberry Muffins Ingredients

110 grams Half Fat Sunflower Spread
100 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
150 ml Semi Skimmed Milk
2 Free Range Eggs beaten Free Range Eggs
1 tsp Vanilla Extract (Nielsen-Massey) Vanilla Extract (Nielsen-Massey)
300 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
2 tsp Baking Powder
110 grams Fresh Blueberries
grams Icing Sugar Shaker (Silver Spoon) to dust Icing Sugar Shaker (Silver Spoon)

How to make Blueberry Muffins

  1. Preheat oven to 150°C, 300°F, Gas Mark 2.
  2. Line a muffin tray with 10 muffin papers.
  3. In a large mixing bowl beat together the sunflower spread, sugar, eggs, milk and vanilla until light and fluffy.
  4. Add the flour and baking powder beating well until smooth in consistency.
  5. Stir in the blueberries and spoon the mixture into the prepared muffin cases.
  6. Bake in a preheated oven for 30-35 minutes until firm to the touch. method tip
  7. Allow to cool, remove from the tin and dust with icing sugar.

"I was really dissapointed with this recipe :0( Firstly the ingredients list does not have any eggs in it yet the method does so i guessed on two eggs for the recipe (i looked at the other muffin receipes for this). Once made, the muffins were more like Blueberry Scones - nice but not really what i was after! "

"I made these buns with my 3 year old, they were nice and simple to make and tasted ok, if a little heavy. I think next time I may use butter instead. All in al though, a good bun."

"I wasn't sure about the recipe at forst as its the first time i've made muffins with cake mix. The muffins have just come out of the oven and they look lovely, well risen and moist, although it does make 12 not 10 and its very hard to beat milk and butter until its light and fluffy! "

"Very good recipe, first batch a bit dry so on the second i added 50ml of vegetable oil. this has made them alot better. dont over mix as they will make the muffins tough. treat them like scones just mix and cook."
