Marmalade Muffins Ingredients

4 tbsp Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
225 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
1 tbsp Baking Powder
0.50 tsp Bicarbonate Of Soda
1 tsp Salt
1 Happy Eggs Beaten Happy Eggs
225 ml Milk Milk
50 grams Butter Melted And Cooled
1 tbsp Orange Zest Grated
6 tbsp EPC Henley Seville Orange Marmalade

How to make Marmalade Muffins

  1. Sift the dry ingredients into a large bowl.
  2. Beat together the egg and milk, then add the melted butter and orange zest. method tip
  3. Make a well in the centre of the dry ingredients and pour in the liquid all at once.
  4. Mix lightly until just combined.
  5. Spoon 2 tablespoons batter into the base of each of 12 paper muffin cases.
  6. Add about 2 teaspoons marmalade then cover with the muffin batter to fill the cases three-quarters full.
  7. Bake for about 20 minutes Gas 6/200°C/400°F until golden brown and cooked through. method tip
  8. Cool on a wire rack.
  9. Serve warm or cold.

"I have just made these. First impressions not as nice as i hoped. I feel the marmalade could do with being distributed more evenly in the mix rather than dolloped in the middle. I left the salt out as i rarely bake/cook with salt, maybe that was a mistake who knows. Will attempt them again."

"I just made these for my husband for Valentine's Day and they are lovely. I put a couple of spoons of marmalade in the mix as well. Delicious warm. I made a jam version for the kids which they loved. "
