Pecan Muffins Ingredients

110 grams Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)
350 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
2 tsp Baking Powder
0.50 tsp Salt
1 tsp Ground Cinnamon
250 ml Milk Milk
2 Free Range Eggs Free Range Eggs
50 grams Butter Melted
75 grams Pecan Nuts Roughly Chopped

How to make Pecan Muffins

  1. Sift the dry ingredients into a mixing bowl.
  2. Beat together the eggs, milk and melted butter and pour into the dry ingredients. method tip
  3. Add the pecans to the bowl and stir quickly until just blended - the mixture will look lumpy but it's this that makes the muffins light.
  4. Spoon into buttered muffin tins or paper muffin cases, filling them two-thirds full.
  5. Bake for 20-25 minutes Gas 6/200°C/180°C until risen and golden. method tip
  6. Leave to cool in the tins for 2 minutes then finish cooling on a wire rack. method tip
