White Chocolate Strawberry Centre Muffins Ingredients

227 grams Butter unsalted, or baking margarine (softened)

0.50 tsp Vanilla Extract (Nielsen-Massey) Vanilla Extract (Nielsen-Massey)
85 grams White Chocolate Chips (Silver Spoon Create) White Chocolate Chips (Silver Spoon Create)
85 grams White Chocolate Chips (Silver Spoon Create) for the topping White Chocolate Chips (Silver Spoon Create)
1 small strawberry per muffin (15 to 18 in total) washed and dried.

How to make White Chocolate Strawberry Centre Muffins

  1. 160°C (fan) 180°C (conventional oven) Gas Mark 4 method tip
  2. Beat the softened butter and caster sugar together in a mixing bowl until creamy. method tip
  3. Add the eggs and vanilla extract and beat again for 2 or 3 minutes. method tip
  4. Fold in the flour and White chocolate drops
  5. Place the muffin cases into the muffin tins and put approximate 1 tablespoon of mixture into each case. method tip
  6. Put one strawberry in the centre of each muffin mix and push it down slightly. During the baking process the strawberries will sink into the cake. method tip
  7. Bake for approximately 35 minutes or until golden in colour. method tip
  8. Allow the cakes to cool and then drizzle melted White chocolate over each one. method tip

"I am new to this site and I found this and thought i would give it a go, well what can I say, my husband couldn't wait for them to cool before he ate one! Really easy to make and I used dark choc chips instead of white as I didn't have any at home, they were really tasty and light. All in all a big thumbs up, will be using this site on a regular basis now I have found it, thank you Baking Mad "

"I have just made these, the second muffin recipe I have used off this site. They turned out lovely and tasted just as good as they looked. I topped mine with milk chocolate before I drizzled white chocolate on them. A wee tip: To save a lot of cleaning of bowls with leftover melted chocolate in them, make some Rice Krispie cakes with the remaining chocolate. Just pour the Rice Krispies into the already melted chocolate. The bowls will be easier cleaned afterwards."
