Strawberry & Almond Crumble Tarts Ingredients

100 grams Plain White Flour (Allinson Nature Friendly) Plain White Flour (Allinson Nature Friendly)
80 grams Butter straight from the fridge
25 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
25 grams Almonds ground
1 tbsp Water Cold
3 tbsp of smooth strawberry jam
250 grams Strawberries washed and quartered
75 grams Almonds chopped
1 tbsp Light Muscovado Sugar (Billington's) Light Muscovado Sugar (Billington's)

How to make Strawberry & Almond Crumble Tarts

  1. Turn the oven on 160°C(fan), 180°C (conventional) Gas Mark 4. method tip
  2. In a large mixing bowl, mix the sugar and butter together using your fingertips. Add the flour and ground almonds and continue mixing to get a crumb state.. method tip
  3. At this stage take out 3 tablespoons of the mix and save for the topping.
  4. Add the water to the bowl and knead the mix to a dough state. Add a little more water if necessary.
  5. Wrap the dough in cling film and refrigerate for 15 minutes.
  6. Turn the dough out onto a floured work surface and roll out. Cut out 6 rounds using a 12cm cutter.
  7. Line 6 tartlets tins or muffin tins with the pastry rounds.
  8. Warm the jam until it has melted slightly and add the strawberrys.
  9. Divide the jam/strawberrys between the tart cases.
  10. Using the reserved crumble mix – add the chopped almonds and sugar and mix together using fingertips.
  11. Divide the crumble topping over the tops of the tarts.
  12. Bake for 35 to 40 minutes. method tip
  13. Allow the tarts to cool before removing from the baking tins.
