Banana Fritters Ingredients

6 Bananas
200 grams Self Raising White Flour (Allinson Nature Friendly) Self Raising White Flour (Allinson Nature Friendly)
30 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 tsp Baking Powder
1 Free Range Eggs Free Range Eggs
300 ml Milk Milk
0.50 tsp Cinnamon ground
0.25 tsp Nutmeg
1 Lemon Zest
Golden Icing Sugar (Billington's) to dust Golden Icing Sugar (Billington's)
1 l Vegetable Oil for deep frying

125 grams Dark Chocolate
125 ml Double Cream
25 grams Unsalted Butter
2 tsp Dark Rum

How to make Banana Fritters

  1. In a large bowl combine the flour, baking powder, spices, sugar and lemon zest
  2. Make a well and add the egg and the milk a little at a time, mixing well until you get a smooth batter. Leave the better to rest while you make the chocolate dip
  3. Place the dark chocolate in a bowl and heat the double cream in a saucepan. Pour the hot cream over the dark chocolate and stir gently until the chocolate has melted. Add the butter and keep stirring until glossy and add the rum and mix well
  4. Heat some vegetable oil for deep frying in a deep fat fryer or wok to 180°C
  5. Cut the bananas in half lengthways and half again horizontally. Dip the banana pieces into the batter and coat well
  6. Gently put the battered banana pieces into the hot oil and fry until golden brown. Drain onto kitchen paper. Dust with icing sugar and serve with the chocolate dip
