Citrus Queen of Puddings Ingredients

75 grams Fresh White Breadcrumbs
300 ml Milk skimmed Milk
1 tsp Vanilla Extract (Nielsen-Massey) Vanilla Extract (Nielsen-Massey)
3 Happy Eggs Yolk Happy Eggs
4 tsp Half Spoon Granulated Sugar (Silver Spoon) Half Spoon Granulated Sugar (Silver Spoon)
4 tbsp Lemon Curd, reduced fat

How to make Citrus Queen of Puddings

  1. Preheat oven to 180°C, 350°F, Gas Mark 4. method tip
  2. Heat the milk and vanilla in a small saucepan until boiling. method tip
  3. Beat together the egg yolks with half the sugar then pour over the milk, whisking to combine. method tip
  4. Divide the breadcrumbs between 4 individual ramekin dishes and pour over the custard mixture.
  5. Transfer to a preheated oven and bake for 15-20 minutes or until set.
  6. Remove from the oven and spread with lemon curd.
  7. Whisk the egg whites to stiff peaks then add the remaining sugar very slowly, a little at a time.
  8. Place the mixture into a piping bag with a star nozzle and pipe over the lemon curd.
  9. Reduce the oven temperature to 150°C, 300°F, Gas Mark 2. 1. Return the puddings to the oven for 20 minutes to allow the meringue to crisp. 2. Serve hot with virtually fat free fromage frais.
