Orange & Mascarpone Brandy Snaps Ingredients

Orange Curd
50 grams Granulated Sugar (Silver Spoon Homegrown) Granulated Sugar (Silver Spoon Homegrown)
250 grams Mascarpone cheese
1 Orange medium

How to make Orange & Mascarpone Brandy Snaps

  1. Using a vegetable peeler cut a few fine strips of orange peel. Boil in a little water for 2 minutes to soften, than drain.
  2. To make the syrup, put 5 tbsp of water into the pan with the sugar and boil for 2-3 minutes, add the orange strips and boil for 5 minutes. Cool
  3. Romove the rest of the peel & pith from the orange and cut into segments.
  4. Using a teaspoon, spoon alternate layers of mascarpone and orange curd into the brandy snap basket. Decorate with orange segments and a pile of the orange strips.
