Date and Muesli Loaf Ingredients

225 grams Very Strong White Bread Flour (Allinson) Very Strong White Bread Flour (Allinson)
175 grams Oatmeal Bread Flour -1/2 medium oatmeal, 1/2 Allinson strong Oatmeal Bread Flour -1/2 medium oatmeal, 1/2 Allinson strong
0.50 tsp Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
0.50 tsp Salt
100 grams Dates Chopped
2 tbsp Honey
1 tsp Ground Cinnamon
75 grams Muesli
1 sachet Easy Bake Yeast (Allinson) 1 x 7g sachet Easy Bake Yeast (Allinson)
125 ml Milk warmed Milk
0.50 tbsp Sunflower Oil
100 ml Water
1 tbsp Apricot Jam Warmed

How to make Date and Muesli Loaf

  1. Place all of the ingredients into a mixer with a dough hook attached.
  2. Mix to a soft dough and knead for 5 minutes.
  3. If mixing by hand, put the flour, sugar, salt, dates, honey, cinnamon and muesli into a bowl. Sprinkle on the yeast
  4. Mix to a soft dough with the milk and oil. method tip
  5. Knead on a floured board for 10 minutes. method tip
  6. Shape into a greased 2lb loaf tin. method tip
  7. Leave to prove until double in size. Preheat the oven to 190°C/fan 170°C/Gas Mark 5 method tip
  8. Bake for 30 minutes. method tip
  9. Glaze with the apricot glaze while still warm.
