About the bake

Swirled and whirled with vanilla and chocolate sponge this marble cake is quick and easy to make, but looks super impressive when cutting in for a slice.

Method

  1. Step 1:

    Preheat the oven to 180°C (fan 160°C, gas mark 4) and grease a a large loaf tin (2lb).

  2. Step 2:

    Make the chocolate sponge by beating the butter and caster sugar until light and creamy.

     

  3. Step 3:

    Add one egg and stir until smooth, do the same with the second egg.

  4. Step 4:

    Sieve the flour and the cocoa powder into the mixture, add the milk and beat together until smooth.

  5. Step 5:

    Make the vanilla mixture in a separate bowl using the same method but substituting the cocoa powder for the vanilla extract.

  6. Step 6:

    Add some of the chocolate mixture to the tin, followed by the vanilla mixture and then the remaining chocolate mixture and the remaining vanilla mixture. Mix the two mixtures together slightly just so that the mixture is swirled. Bake in the oven for 55 minutes.

    • 125g Butter (unsalted)
    • 125g Billington's Unrefined Golden Caster Sugar
    • 2 Egg(s) (free range) (medium)
    • 115g Allinson's Self Raising Flour
    • 2 tbsp Cocoa powder
    • 2 tbsp Milk
  • For the vanilla sponge

    • 125g Butter (unsalted)
    • 125g Billington's Unrefined Golden Caster Sugar
    • 2 Egg(s) (free range)
    • 125g Allinson's Self Raising Flour
    • 2 tbsp Milk
    • 1 tsp Nielsen-Massey Vanilla Extract
