Method
Step 1:
Put the flours, sugar, salt and yeast into a bowl.
Step 2:
Mix to a soft dough with the water.
Step 3:
Turn onto a floured surface and knead for 10 minutes. Shape as desired and put into an appropriate greased loaf tin.
Step 4:
Cover and leave to prove until double in size.
Step 5:
Brush with warm water and bake in an oven preheated to 220 C (fan 200 C, gas mark 7) and immediately turn the heat down to 200 C (fan 180 C, gas mark 6).
Step 6:
Bake for 30-35 minutes.

- 75g Very strong wholemeal bread flour
- 375g Very strong white bread flour
- 1.5 tbsp Unrefined golden granulated sugar
- 1.5 tsp Salt
- 1.25 tsp Easy bake yeast
- 260ml Warm water

I like thing way of cooking french bread
Very nice bread, almost like a plain loaf. Although I don't think the brown flour is necessary
This Rustic bread was my first bake using Bakingmad and I must say it was brilliant. The recipe was very easy to follow and the end result was wonderful. One change I made was to put the kneaded loaf into a cast iron pot after I had preheated it in the oven at fan 200C. I baked it from 30 minutes and then took the top off the pot and continued to bake for a further 10 minutes.
