This blackberry bramble jelly is perfect to make in the early Autumn when the blackberries are in season.

Method

  1. Step 1:

    Place the blackberries, water and lemon juice in a preserving pan, bring to the boil. Add the apple pectin then simmer and a low heat for 20 minutes.

  2. Step 2:

    Tip the mixture into a jelly bag and leave to drip overnight.

  3. Step 3:

    Add the water or enough water to make two pints of liquid mixture. Place back in the preserving pan with the sugar and heat over a low heat until all the sugar has dissolved, approximately 10-15 minutes.

  4. Step 4:

    Skim any scum from the top of jelly and fill sterilised jam jars. Cover, seal and label.

    • 120ml Water
    • 250ml Apple pectin
    • 1 Lemon(s) (juice from)
