Our brown bread recipe is a simple and satisfying bake, and perfect for bakers who are new to making their own bread. It’s soft, airy, and delicious, and perfect for sandwiches - or simply toasted with butter.
<h3>Does wholemeal bread flour need more water?</h3>
Wholemeal flours like rye, buckwheat or gluten-free are ‘thirstier’ than other flours - they absorb more water, so you’ll need more to get your dough to the right consistency.
<h3>Does wholemeal bread require more kneading?</h3>
As wholemeal flour absorbs more water, you’ll have to knead it a little more than you would if you were making white bread.
<h3>How to make your wholemeal loaf rise</h3>
If your wholemeal bread isn’t rising, this could be because the yeast is too hot, which causes the yeast to die. The yeast should be warm, not too hot or cold. Make sure the ingredients you mix the yeast with are also warm.
Our trick is to add some strong white bread flour to the wholemeal bread flour. Even just a little white flour has enough gluten to give the dough better structure. If you’d like to do this, we recommend using Allinson's Strong White Bread Flour to your wholemeal bread flour - it’s a great all-purpose flour and its high gluten content makes it particularly suitable for bread making.

<h3>What's the best flour for making pizza dough?</h3>
We recommend using Allinson's Strong White Bread Flour, as bread flour has higher gluten levels than culinary flours (such as plain or self-raising). Very strong bread flour has a higher gluten level, so it's perfect for pizza dough.
<h3>How do I knead pizza dough?</h3>
It couldn't be easier to knead your pizza dough, even if you're new to making homemade pizza bases! Kneading the dough is a vital stage, as it develops the dough’s gluten, giving the dough its chewy texture and structure.
To knead pizza dough, start by dusting your work surface with flour. Place the dough on the surface and press it down with the heel of your hand, pushing it away from you. Fold the dough back over itself, give it a quarter turn, and repeat the pressing motion. Continue this rhythm, adding flour as needed to prevent the dough from sticking.
Knead for about 10 minutes until the dough is smooth and elastic. To test if it’s ready to bake, poke the dough with your finger; it should spring back.

When baking tiger bread, a paste made from yeast, sugar, oil, salt, ground rice and water is painted onto the surface. When cooked, this paste gives tiger bread its unique patterned crust. This crust is crunchy, chewy and salty, whilst the dough inside remains soft and delicate.

<h3>Is milk bread the same as brioche?</h3>
Milk bread and brioche are both delicate, soft and sweet breads. Brioche is richer than milk bread as it is enriched with lots of butter. Brioche also contains egg, giving it its yellow colour and chewy texture.
<h3>How is milk bread different to regular bread?</h3>
When making milk bread, the only liquid you'll need to use is milk. With most other yeast-based bread recipes, like with regular white bread, you'll use water.
<h3>Why isn't my milk bread fluffy?</h3>
If your milk bread is coming out dense rather than fluffy, the dough is likely under-kneaded. For your milk bread to become soft and fluffy, the dough needs to be kneaded enough so that the gluten expands.
