How to make mini pizzas
These mini cheese and tomato pizzas are fantastic to serve up at a party, the perfect finger food that doesn’t compromise on taste. Our cheese and tomato pizza recipe is quick and easy, meaning more time enjoying the party!

Method
Step 1
Put the flour, yeast and salt into a bowl and mix together, then make a well in the centre.
Step 2
Stir the sugar into the warm water then pour into the well in the dry ingredients.
Step 3
Working from the edge mix all the dry ingredients into the water. When the mix has come together turn out onto a lightly floured surface and knead for 10 minutes. The dough should be soft and spring back to the touch.
Step 4
Flour the dough and cover with cling film, then leave to rest for about 15 minutes.
Step 5
Carefully roll out the dough until it is about 1cm thick, then use a 6cm round cutter to cut out discs of dough, depending on how many pizzas you want to make. Then cover and leave to rest for about 10 minutes.
Step 6
Preheat the oven to 200°C (180°C fan, gas mark 6). For the topping; spread the tomato purée over the pizza, then sprinkle on the diced tomato and grated cheese.
Step 7
Bake in the oven for 8-10 minutes until the cheese has melted.

- 1/2 tspSalt
- 7gAllinson's Easy Bake Yeast
- 2 tspBillington's Unrefined Golden Caster Sugar
- 325mlWarm water
For the Topping
- 3 tbspTomato purée
- 6Tomatoes (finely diced)
- 250gCheddar cheese (grated)
