About the bake

The nation loves a banana bread. The nation also loves an air fryer. Juliet Sear has combined the two to create an easy banana bread recipe just for air fryers. This air fryer banana bread is the best way to use up your over ripe bananas without having to turn on your oven.

    Method

    1. Step 1

      Butter a 1lb loaf tin and line the base and sides with baking parchment (or use mini loaf pans/moulds or cupcake moulds for smaller air fryer baskets

    2. Step 2

      Cream the softened butter and light muscovado sugar with the vanilla until light and fluffy.

      Ingredients for this step

      • Butter (or dairy free spread if you're vegan) (125g)
      • Billington's Unrefined Light Muscovado Sugar (warmed) (125g)
    3. Step 3

      Add the eggs one at a time beating to incorporate.

      • Medium eggs (2)
    4. Step 4

      Mix the baking powder and cinnamon into the flour and fold this through, then add the 2 mashed bananas.

      • Self-raising flour (140g)
      • Baking Powder (1 tsp)
      • Cinnamon (1 tsp)
      • Banana(s) (very ripe, mashed) (2)
    5. Step 5

      Heat the air fryer to 150c

    6. Step 6

      Bake for cupcakes for around 12- 15 mins, mini loaves for 15-18 minutes or for the large loaf approx 40-45 minutes, but check the loaf at 5-min intervals from around 30 mins in the oven by testing it with a skewer as the time may vary depending on the shape/depth of your loaf tin. If the top is browning too much then turn the temperature down to 140c for the second part of the bake. 

    7. Step 7

      Cool in the tin for 10 mins, then remove to a wire rack.

    8. Step 8

      To top, mix 50g icing sugar with 2-3 tsp water to make a runny drizzle icing, spoon this across the top of the cake or cakes and decorate with a few banana chips.

      • 50gSilver Spoon Icing Sugar 
      • A handfulDried banana chips (to decorate)
