Apple & Almond Tarts
About the bake
Our little Apple & Almond Tarts are actually made with a simple dough, apples, warming cinnamon and sweet marzipan. The rich mascarpone really adds extra luxury to this recip. We think our little apple and almond tarts make for a great winter dessert and can be eaten warm or cooled.

For the dough
- 300gAllinson's Strong White Bread Flour
- 0.5 tspSalt
- 1 tspBillington's Unrefined Golden Caster Sugar
- 1 tspAllinson's Easy Bake Yeast
- 1 tbspOlive oil
- 200mlWarm water
For the topping
- 150gMascarpone cheese
- 0.25 tspCinnamon
- 100gMarzipan (grated)

Method
Step 1
Put the flour, salt, sugar and yeast into a bowl. Add the olive oil and warm water to make a soft dough. Add a drop more water if needed.
Step 2
Turn the pizza dough on to a lightly floured surface and knead well for 8-10 mins until smooth and elastic. (Or use a large mixer with dough hook attachment).
Step 3
Grease 2 baking sheets. Divide the dough into 8 balls, then press each one into a round and put onto baking sheets.
Step 4
Mix together the mascarpone and cinnamon and spread a dessert spoonful of the mixture on top of each dough round. Sprinkle over the marzipan.
Step 5
Slice each apple quarter and arrange the apples on top. Cover with cling film and leave in a warm place to rise for 30 mins.
Step 6
Preheat the oven 230ºC (fan 210ºC, gas mark 8). Bake the apple puff for 15 mins until golden and the bases are firm. When cooled slightly, dust with icing sugar.
