Our favourite tip is to make the meringues in advance to save time, they will keep in an airtight container for several days when kept in a cool, dark place. We've included one of our useful videos below showing you how to separate eggs for the meringues.

Vanilla Meringues

This mini baked Alaska recipe &nbsp;is a real show-stopper! It's a classic dessert and really isn't as complicated as you may think. The combination of a soft sponge base, creamy homemade vanilla ice cream and fruity jam, encased in a fluffy meringue makes a truly delicious pudding for any occasion. You need to allow for part of this dessert to freeze overnight so you should prepare to make this the day before you wish to serve it.

Mini Baked Alaska

These&nbsp;simple swiss&nbsp;meringues are delicious sandwiched together with whipped cream. To give an added twist try adding a drop of flavoured extract or food colouring, to brighten up your meringues or alternatively, fold in hazlenut praline into the meringue just before baking with a shot of espresso to create a tasty coffee hazlenut caramel meringue. Chocolate swiss meringues are also yummy, simply melt 100g (3½oz) dark chocolate and swirl with a wooden spoon through the finished meringue mixture just before baking for a marbled effect.

Mint Meringues

This recipe does take a while, but the results are more than worth it. Our Coffee Meringue is the perfect dessert for a dinner party with guests. We've taken the classic meringue recipe and flavoured it with a coffee extract and a hazelnut praline, which adds some serious crunch and an elegant decoration. We've also decorated ours with grated dark chocolate for an extra level of luxury. The key to this recipe is to get your stiff peaks right for the meringues, have a look at our video above for some tips.&nbsp;

Coffee Meringue

This decadent dessert never fails to impress and is very easy to make. I even use tinned pears for convenience but you can, of course, poach fresh ones. Mango Pavlova

This dish celebrates three of our absolute favourite things; strawberries, meringues and kisses. &nbsp;These heavenly light, bitesize swirls of meringue, kissed with a hint of Nielsen-Massey vanilla extract are crisp and completely moreish, and that is before you add the dreamy filling. Sweetened fresh strawberries folded into rich, thickened double cream are sandwiched by the meringue kisses giving you a simple and satisfying bake. Be sure to leave yourself plenty of time to prep this pud as the meringues are bit diva-ish and need to hang out in the oven for a while to crisp up to perfection.

We've called this an Apple Meringue Tart but really it’s an Apple Meringue Pie with butterscotch. The difference is that we've not included a pastry case for this recipe and you can just use an ovenproof dish to serve the apples and the meringue in.
